The orgins of the barbecue cooking technique comes from a Caribbean Indian tribe called Taino. First mentioned in accounts of Spanish explorers of the West Indies in 1526. The cooking method involved grilling on a raised wooden grate called in Spanish barbacoa. In North America the barbecue technique was used in the American Colonies. George Washington's diaries have references to barbecues lasting as long as three days. By the early part of the 20th Century Thomas Edison designed the first commercial factory to make the charcoal briquette, which was built by Henry Ford in 1921. Today Barbecue is an important cornerstone of Southern cooking and a staple of the American diet.
