Pizza

Pizza has humble origins with a spirited debate as to its beginnings. The name "pizza" is thought to have orginated from the Latin "pinsa" or flatbread. Seasoned flatbread was a common food in the Mediterrian area, found in ancient Greek, Phoenician, Hebrew, Armenian, and Babylonian cultures prior to the Roman Empire. Prior to the introduction of tomatoes (from Peru in 1522), flat bread was topped with olive oil and spices. On the Italian Peninsula, Naples (established by the Greeks in 600 BCE), would become best known for its "Pizza Margherita" due to the visit of the Italian Queen Margherita to the Pizzeria Brandi in 1889. The pizza served in the new nation of Italy had the colors that symbolized the flag: red from tomatoes, white from mozzarella, and green from spices. The first American pizza shop was opened in New York City by Gennuardo Lombardi in 1905. With the new immigrant growth in New York City pizza gained in popularity as a working man's staple among the Italian immigrants. As pizza spread in New York, it became popular outside of ethnic neighborhoods after the Second World War. Today pizza has multiple forms and toppings, and over the years has become a staple of the American restaurant scene.
